Calzone (Pizza Soufflée)

1. For the dough: makes 6 to 8 pizzas

500 g flour

1 cup of buttermilk (can be replaced by 1 cup of wholemilk with 1 tblspoon of lemon)

1 whole egg

1 cup of warm water (adjust according to you flour)

1 tbsp of olive oil

1 pack of active or instantaneous yeast

2 tsp of salt

1 tsp of sugar

Sesame and black seeds (optional)


Method:

1. Mix the yeast with the water and sugar and let the yeast activate and foam up.

2. In a mixer or a bowl (by hand) add the rest of your ingredients then the yeast mix and mix well until you get a smooth ball of dough. (See photos below)


2. The sauce:

Ingredients:

1 can of peeled tomatoes or 5 fresh tomatoes

2 tspns of minced garlic

2 tblspns of olive oil

1/2 tspn of rosemary

1/2 tspn of thyme

1/2 tspn of dried oregano

1/2 tspn of basil

Salt and Pepper to taste

Optional: Paprika


Method:

1. Crash your tomatoes.

2. Add the oil to a saucepan then your tomatoes and seasonings.

3. Cook on medium heat for 20 mins then let it rest.


Stuffing:


3 hard boiled eggs

black olives

Kiri cheese (Cream cheese)

Mozzarella cheese

1 can of Tuna (or can be replaced with cooked shrimp or smoked meat)





THE ASSEMBLY: Follow the pictures shown below then brush with an egg yolk and cook in a preheated 200C (rack in the middle) for 20 to 25 mins.


Serve warm! :)
