This recipe is a quick way to turn over boring dates into an exciting and healthy treat. The ingredients are simple and basic but their combination resides in a fragrant and delicious sweet.

What you need:
30 dates, cleaned
100 grams of ground almonds
30 grams of powdered sugar, (you can add up to 50 grams to make it sweeter)
1 to 2 tablespoons of your favorite rosewater
1 teaspoon of vanilla sugar or almond extract (optional*)
sliced pistachios or pine nuts for decoration (optional*)
Method:
1. Start by combining the almonds, sugar and vanilla* in a bowl. Add the rosewater gradually: start with 1 tablespoon and fully incorporate it before you add the next one. BE CAREFUL NOT TO ADD TOO MUCH LIQUID HERE!
You should end up with a marzipan block like the one shown in the picture:
2. Let your marzipan sit. Make a lengthwise slit in each date. Squeeze date open and remove pit.
3. Shape level teaspoon marzipan into an oblong ball. Stuff into the center of date. Gently squeeze date shut, leaving some marzipan still exposed. Repeat with remaining dates.
4. Optional: Decorate your dates with sliced pistachios or pine nuts. Enjoy it with a cup of tea or coffee. :)
